Chardonnay
Chardonnay is a green-skinned grape variety that is influenced heavily by oak and terroir. It is widely planted around the world but is believed to have originated in the Burgundy region of France. It is relatively easy to cultivate and adapts well to different conditions. In California, it became so widely planted, that its acreage exceeded that grown in France by 1988. Chardonnay is frequently used in sparkling wines. Malolactic fermentation and the use of oak greatly affect the resulting flavors in Chardonnay. If malolactic fermentation is not used, the wine will tend to have more green apple flavors in it. Using oak during fermentation will bring "toasty" flavors such as caramel, smoke, cream, spice, and vanilla. It is most commonly paired with white meats such as chicken or turkey, while an oaky Chardonnay can be well paired with spicy foods as well.
