Pasolivo Olive Oil - Estate Tuscan Blend 500ml
From the December 2008 harvest. Lush, green and peppery, this signature oil is a blend of five Tuscan varietals grown on Pasolivo's farm in Paso Robles. The olives are picked by hand and pressed within just a few hours, giving a freshness and intensity that makes Pasolivo's oils unique. Pasolivo can be used in salads with a rich balsamic vinegar, or as a finishing oil to drizzle over pasta, roasted potatoes, sautéed greens or a grilled steak. Certified extra virgin by the California Olive Oil Council, extremely low acidity. A very intense oil with a grassy nose, a pepper finish and that hint of bitterness that is the hallmark of Tuscan varietal oils. Good for up to 24 months, but best used early in its life.

Bright, sweetly green and gorgeously fruity, this California EVOO is made from Mission and Manzanillo olives (California varietals, and thus the name) that are handpicked from Pasolivo's Paso Robles orchard. They crush the olives immediately in their own olive mill, and leave the oil unfiltered before releasing it. The fruity, wheatgrass nature of this oil is beautiful. Use it to finish a dish or for dipping a crusty hunk of bread. Pour it over roasted peppers or fresh tomatoes with mozzarella. Good for up to 24 months, but best used early in its life.
